TEAM HEAD WAITER
Basic Functions
· To oversee food and beverage service in his/her assigned station in the dining room.
Duties and responsibilities
· To embrace our Hospitality standard, which is
· Greeting all guests and co-workers

· Use guest’s and co-worker’s names
· To be on duty at least 30 minutes prior to start of service, in correct uniform, well-groomed and ready to work and following the look book at all times
· To ensure proper service in his/her assigned team which exceeds guest’s expectations.
· To check the pantries and ensure that the Team Waiters have set up the pantries in the correct manner with the required mise en place that all electrical fittings are switched on and functioning properly.
· To ensure that the Team Waiters have turned in their order tickets to the galley as soon as possible.
· To ensure the direction given to the Team Waiter is clear and understandable.
· To ensure that all special requests made by guests are accommodated as far, as is practical.
· To ensure the Order tickets are filled out as per Menu, using actual names of the food served.
· To ensure Order Tickets are made, one Order Ticket per table.
· To check with your tables and ensure the food and service is to the satisfaction of the Guest, and take necessary action if needed.
· To arrange the singing of occasion cakes and ensuring that all cakes are served.
· To monitor, the pantry of your team during service ensuring company working practices are followed, such as “clean on clean are” “dirty on dirty area” and soiled utensils are carried out in a timely manner.
· To be familiar with ships activities and tours so that recommendations can be made to the guests.
· To ensure all USPH (United States Public Health) Regulations are followed and maintained.
· To ensure that assign side duty for your team is completed as specified.
· To liaise with the Maitre D’ and Hostess regarding guest counts, special diet requests, occasion cakes lists.
· To ensure all tables are set-up as per company standards.
· To ensure that the side station and pantry are clean and tidy and have been set up correctly after dinner.
Serving wine in professional manner by suggesting and pouring in appropriate glass.
